Mexican Fiesta Night April 9th

If you love Mexican food you need to come to this class! Mexican food is my thing, and I’m super thrilled to share some of my favorite recipes with you. For starters, I’m going to teach you how to make the most amazing meat-free tacos that are filling and very satisfying. You’ll also learn how to make a variety of fixings and side dishes that would compliment any Mexican dish, including tacos, burritos, etc. Last, I’m going to teach you how to make the most amazing enchiladas with homemade enchilada sauce and my signature cashew queso cheese. Plant-based Mexican will have a new meaning for you after this class! All dishes are meat & dairy-free.



Quinoa Tacos – These tacos are so delicious! High-protein quinoa makes for a perfect meat substitute keeping your tacos both hardy and filling. The quinoa is prepared using homemade taco spices and chipotle lime sauce.

Mango Salsa –  Fish tacos aren’t the only tacos that taste amazing with mango salsa! Made with fresh mango, tomatoes, cilantro and spices, this salsa pairs perfectly with the chipotle lime sauce in the quinoa tacos.

Guacamole Fresco – Really, the best guacamole ever! Fresh avocado, cilantro, tomatoes, lime and seasonings make this a truly simple, yet unforgettable guacamole that will be your go-to recipe forever and always.

Chipotle Black Bean Enchiladas – These enchiladas are made with black beans, grilled peppers, onions & eggplant, and smothered in homemade enchilada sauce and Cashew Queso cheese.


Class will mostly be observation, with the exception of a few volunteers to help with food preparation when needed. Also, there will be lots of eating throughout with recipes and leftovers to take home.
