Cinco de Mayo is right around the corner and I must have you prepared to celebrate it veggie-style! Mexican food is my thing, and I’m super thrilled to share some of my favorite recipes with you. For starters, I’m going to teach you how to make the most amazing meat-free tacos that are filling and very satisfying. Second, you’ll learn how to make a variety of fixings and side dishes that make any Cinco de Mayo feast complete. I’m even going to include tequila!

Chipotle Quinoa Tacos with Cashew Queso Cheese  |  Using traditional taco seasonings and a few other secrets, you’ll discover how to turn Quinoa, one of the healthiest foods around, into a delectable taco filling. You’re also going to learn how to create that delicious chipotle flavor using authentic, dried chipotle chiles. All you Chipotle lovers should not miss out. Lastly, I’ll be giving away one of my most prized recipes, Cashew Queso Cheese Sauce. You won’t believe how incredibly simple it is to make.

Tequila Lime Cilantro Coleslaw  |  I’ll be giving a spin on one of my most popular recipes, Cilantro Lime Coleslaw. This recipe itself is out-of-this-world delicious, but tequila! No Cinco de Mayo is complete without a splash of tequila. I’ve already tested the recipe and I can assure you it will blow your socks off.
