This summer I got all hot and heavy over cilantro. I’ve always known about its health benefits but never really had an interest in cooking with it. What was I thinking? Now I’m IN LOVE with this scrumptious herb, and I’m deeply in love with this dressing. It’s been a staple in my fridge all summer long. I’ve mainly enjoyed it over salads, and recently I decided to use it to create a Cilantro Lime Slaw that is out of this world. The dressing recipe is slightly tweaked from this version, but feel free to play around with the recipe to find the right flavor and texture you enjoy!
1 tbsp. Nama Shoyu, Wheat-free Tamari, or Coconut Aminos
1 tbsp. Grade B Maple Syrup or Coconut Sugar
2 tbsp. tahini
Pinch Sea Salt
½ tsp. ground ginger
Add ingredients to a Vita Mix or other high-speed blender and blend until well combined.
If you do not have a high-speed blender, finely chop cilantro and add to a regular blender.
