Sauteed Squash & Zucchini with Cherry Tomatoes
This is one of my favorite quick and easy side veggie recipes. Its basic and simple, but unbelievably delicious! I absolutely love the taste and texture of sauteed tomatoes. In fact, I’ll be experimenting with more veggie dishes that include sauteed tomatoes. So stay tuned!
The secret to this recipe is the EVOO. I’m an olive oil snob, and I use only finest “REAL” olive oil. Unfortunately, most brands (even organic) are not the real deal–they’re often cut with cheaper vegetable oils which are mostly rancid. Luckily, I’ve found a brand that is the real deal. Olio Beato is the most delicious EVOO I’ve ever tasted. I simply cannot use another brand, except for Bariani and bionaturae – a close second and third best. Most health food stores will carry at least one of these brands. If you cannot find them, I highly recommend ordering in bulk from Amazon. It’s absolutely worth it!

Now on to the recipe. Find your finest organic summer squash, zucchini and cherry tomatoes and get cooking.
Ingredients
- 1 large organic summer squash, or 2-3 small
- 1 large organic zucchini, or 2-3 small
- 1-2 cups organic cherry tomatoes
- EVOO
- Garlic Powder to taste
- Pink Salt to taste
Instructions
- Slice your zucchini & squash, and halve your tomatoes.
- Add 2-3 tsp. EVOO to a skillet and turn heat to medium.
- Add zucchini and squash and saute low and slow for 8-10 minutes.
- Add tomatoes and season with garlic powder and Pink Salt.
- Saute for a few more minutes. Be careful not to saute too long, otherwise the tomatoes will get mushy.
- Take off heat and adjust seasoning.
This recipe may seem too simple to be absolutely amazing. However, I assure you it’s a stellar side veggie dish worthy to land on any plate in the finest of restaurants.
